One of the best things about Shimo is that you can use you can grow your own garnish to create one-of-a-kind custom craft cocktails.
Recently, Shimo worked with mixologist Sunny Kim from the Canopy Hilton Washington DC to create some custom craft cocktails with herbs grown in the Shimo garden!

Arugula flower cocktail
1.5 ounces (oz) Mezcal Tequila
0.5 oz pomegranate juice
0.25 simple syrup or agave syrup
0.5 oz orgeat* (almond cordial)
0.25 oz lemon juice
Muddle arugula flowers with simple syrup.
Add all ingredients into shaker and shake well.
Double strain and pour into martini glass.
Garnish with arugula flower.
*orgeat cordial is made from Almond milk, sugar, cognac (2:1:0.5). Mix ingredients well, until very fine.
Mustard Infused Flower Cocktail
1.5 oz. Gin (Infused with mustard flower over night)
0.5 oz. Cointreau
1.0 oz. Hibiscus syrup
0.5 oz. Lemon juice
Serve with over ice Garnish with long flower leaf straight into tall glass —-infused mustard flower Gin. Use only flowers soaked with gin over night and strain them to garnish.
